Pranee's Thai Fruit Salad

4 cups market fresh seasonal mixed fruits, peeled and cut to small bite size:
1 grapefruit
2 oranges
1 pear
1 apple
1 mango
red and green grapes
3 tablespoons brown sugar or palm sugar
2-3 tablespoons fresh squeezed limejuice
¼ teaspoon salt
1 tablespoon lemongrass, sliced
3 Kaffir lime leaves whole or 1 tablespoon lime peels
1 cup mint leaves

Place mixed fruits in a salad bowl, sprinkle with sugar, limejuice and salt and stir well. Chill in refrigerator for half hour or serve right away. Before serving, add lemongrass, Kaffir lime or lime peels and mint and stir gently.
